Gulab Jamun Recipe - The classic sweet, made easy. Makes: 16 gulab jamuns. Time: 35 minutes plus soaking time.
Ingredients
- 11/2 cups (300 g) mawa, grated
- 1/4 cup (50 g) paneer, mashed
- 1/4 tsp (1 g) soda bicarb
- 3 tbsp (45 g) flour
- 1/4 tsp (1 g) cardamom powder
- ghee/oil for deep frying
- 2 cups (400 g) sugar
Method
1. Mix the grated mawa, mashed paneer, soda bicarb, flour and cardamom powder well. Add a little water to bind to a soft dough. Divide the mixture into 16 portions and roll into balls.
2. Add 400 ml water to the sugar and bring to a boil in a heavy bottomed pan to obtain syrup. Clear the syrup by removing the scum, if any.
3. Heat ghee or oil in a pan/kadai. Add the mawa-paneer balls and deep fry on low heat till golden in color. Drain and soak in the sugar syrup for at least 15 to 20 minutes before serving.
